Ivar's owned restaurants within the city that were affected by the new minimum wage, as well as a restaurant outside of the city that was not. Having two restaurants affected but one not allows for a unique side by side comparison of the new tipping structure and payment policies versus the old. The case study was conducted with the management team giving a unique insight into exactly what elements they considered in the decision making process and how those decisions were made.
