Summary: | This unit offers a broad survey of the history of food and beverage culture in the Ottoman Empire and modern Turkey, covering a time period of more than 700 years focusing on Istanbul, the imperial capital, as well as the culinary culture of the Ottoman palace. The thematic topics covered include Ottoman courtly banquets in contrast to everyday eating and drinking customs of the common people, food culture in different religious communities within the Ottoman Empire, and the relation between food and medicine during the early modern era. The types of food ingredients used in the Ottoman palace cuisine, the dishes served at court as well as in Ottoman hospices, the main types of beverages consumed by the inhabitants, and the symbolic meaning of food in Ottoman elite culture are also covered in this unit. The cultural dichotomy that emerged in the Ottoman elite food culture during the modernization era of the nineteenth century represents another major subject exploited in this unit. The unit also covers the food culture of the Balkans region during the Ottoman Era and ends with an exploration of the eating and drinking habits in modern Turkey, which reflect a direct continuation from the Ottoman past. |
